Peppered Beef

This is a peppered beef brisket that our family usually has on "game day". It was always prepared by my mother-in-law and was always a hit of the party. Very peppery, juicy and with very light sauces that balanced the cracked pepper.

  • 0.7 cup Soy sauce
  • 0.3 cup Vinegar
  • 1.0 teaspoon Paprika
  • 1.0 large Garlic A large clove minced
  • 5.0 pound Boneless beef brisket Trim fat
  • 0.2 cup Course ground pepper corns

Take the last two ingredients above and spread pepper on a waxed sheet of paper. Place beef over pepper corns and push down on beef to get the pepper into the brisket. Make sure all sides are covered evenly.

Combine first 5 ingredients and marinade the beef with pepper corns in a covered glass dish over night in the refrigerator. Turning every once in a while. I put the brisket in a zip lock back to make it easy to turn over.

Remove the meat and wrap securely in foil.. Place in a shallow backing disk and bake on 300 degrees for about 3 hours until fork tender. Serve hot or cold.

Goes well on brioche rolls with my mustard and horserdish sauces.
